Parfait (from French meaning "perfect") is a kind of frozen dessert that dates to 1894. American parfait, made by layering parfait cream, ice cream in a tall, clear glass, and topping the creation with whipped cream, fresh or canned fruit, and/or liqueurs. In Canada and the United States, parfaits may also be made by using yogurt layered with granola, nuts or fresh fruits, such as peaches, strawberries, or blueberries.

    200g yogurt
    1/4 cup blueberry topping
    8 orange segments
    1/2 cup muesli
    1 tbsp corn flour
    2 tbsp white sugar

      Hang the yogurt and mix with sugar To squeeze out all the water from the curd, place all the yogurt in a sieve over a bowl and let it stay for 15 minutes. Take the thick curd out and add it to a bowl with brown sugar and orange zest. Mix well and keep in the refrigerator for 30 minutes.


      Make blueberry compote Heat a small frying pan over medium flame and add the blueberries along with 2 tbsp white sugar and corn flour. Stir gently for 3 minutes till it thickens and take off heat. Place in the refrigerator for 30 minutes.


      Assemble the parfait In a bowl, add the yogurt, top it with the blueberry compote, orange segments and a good serving of muesli. Enjoy chilled.
