Cafreal is a spicy preparation consumed widely in the Indian state of Goa. The preparation originated from the Portuguese colonies in the African continent. It was introduced into the Goan cuisine by the Portuguese and the African soldiers serving under the Portuguese. The generic preparation involves fresh coriander leaves, onion, garlic, ginger, cinnamon, pepper, chilli, mace, clove powder and lime juice.

    400g paneer
    Green chili cafreal paste
    Dry roasted spice mix
    4 rumali rotis
    1/2 cup tomato
    1/2 cup onion
    1 lemon
    1/4 cup coriander
    1/2 tbsp green chili
    1 tsp desiccated coconut
    1 tbsp oil for paneer
    1 tbsp oil for tadka
    1 tbsp curry leaves
    1/2 tsp mustard seeds

      Marinate the paneer Coat the paneer with the green chili paste and the dry roasted spice mix. Let it marinate while you prepare the koshimbir salad.

      Prepare the salad Combine tomatoes, onions, green chili, coriander and juice of 1/2 lemon in a small bowl. Take a small frying pan and add 1 tbsp oil; heat on high flame for 30 seconds and add the curry leaves, mustard seeds and desiccated coconut. Fry till the coconut turns golden brown (this will take 1 minute). Add the tadka to the salad and keep aside.

      Pan fry the marinated paneer Heat 1 tbsp oil in a non-stick pan for 2 minutes on high flame. Place the slices of paneer and cook on each side 1.5 minutes (3 minutes in total) till golden brown and crispy. Remove from pan (cook in two batches if required).

      Assemble the roll Heat rumali roti in the microwave for 20 seconds or on a tawa for 1 minute. Place 2-3 paneer slices in each rumati roti and spread the koshimbir salad generously. Squeeze extra lemon if required.
